Tips to Tailgate at Home

Kingsford CharcoalThis football season, you don’t need tickets to enjoy the hottest grid-iron games with friends, family and food fresh off the charcoal grill. Fire up the grill for a tailgate party with all the sights, sounds and smells of the stadium in your own backyard. Gather up the home team and consult these smart game-day strategies intercepted from the playbook of champion pitmaster Chris Lilly and football analyst Mike Golic.

• Avoid a False Start: One of the most common mistakes made when lighting a charcoal grill is allowing the lighter fluid to soak in before lighting the coals. Instead, add lighter fluid following lighter fluid directions, lighting immediately and letting the coals burn until they are covered in ash (about 15 minutes). Austin Barbecue Bean Dip

Austin Barbecue Bean DipIngredients:

1/2 cup KC Masterpiece® Original Barbecue Sauce
2 cans (5.5 ounces each) pinto beans, drained
1/2 cup chunky salsa
1/2 yellow onion, peeled and chopped
1/4 teaspoon garlic powder
2 tablespoons Worcestershire sauce
1 cup shredded Cheddar or taco cheese
4 scallions, green and white parts, chopped
1 medium tomato, seeded and chopped

Instructions:

Preheat the grill (for indirect heat).

In a food processor, puree the KC Masterpiece® Original Barbecue Sauce together with the pinto beans, salsa, onion, garlic powder and Worcestershire sauce until smooth.

Spray an 8-inch heatproof or aluminum pie pan with vegetable oil spray. Spread the bean mixture evenly into the pan. Generously sprinkle the cheese over the top.

Place the pan in the center of the grill and cook for 15 minutes or until the cheese has melted and mixture is bubbly. Remove the pan from the grill and let stand for 5 minutes.

Serve garnished with the chopped scallion and tomatoes with a plate of warmed tortilla or corn chips.

Serves 8.  Total Time: 20 minutes.
